Inspired by my Greek mother-in-law's Kokkinisto. I decided to add clams for something different. Spoon over rice or angel hair pasta, sprinkle with crumbled feta cheese, and serve with crusty bread and white wine.
A large and delicious seafood salad is full of shrimp, imitation crabmeat, avocado, and cilantro. The bright and colorful salad marinates overnight in a light dressing of lime juice and tomato-clam juice cocktail. Serve in tall beer glasses.
